You will need:
1 can of chickpeas
1 large leek
95g vegan mozzarella style cheese- grated (I used the brand Sheese)
3 sun-dried tomatoes roughly chopped
1 tablespoon oil
1 clove of garlic finely chopped
4 pitted dates- roughly chopped
1/4 of a teaspoon of cayenne pepper
pinch of salt
Start by chopping the leek and adding to a frying pan along with the oil, garlic, sun-dried tomatoes, dates and seasoning. Heat gently for 5-10 minutes.
In a mixing bowl add the drained chickpeas and using a masher roughly crush the peas then stir in the vegan mozzarella.
Turn the leeks off the heat and let them cool for 10 minutes.
Once cooled slightly add to the mixing bowl and combine all ingredients.
Mold into patty shapes with your hands and add them to a frying pan/ grill until a crisp colour on both sides.
These are delicious on their own but can also be enjoyed in a bun or with salad.
